A natural vegetable emulsifier based on soy lecithin which is ideal for making airs. Presented in a refined powder. Cold soluble. Very soluble in aqueous mediums but loses its function in oily mediums.
Lecite is the ideal product for converting juices and other watery liquids into airs. It also has a surprising capacity to emulsify impossible sauces.
Maximum recommened dose is 30g per litre.
