Our Extra Mature Gouda 250g is made by master cheesemaker Albert Alferink at Mercer Cheese in the North Waikato. The milk is sourced from the neighbouring farm and aged for at least 2 years. Great example of the cheesemakers 37 years of experience using spring milk. Pasteurised and made with vegetarian rennet.
